Black Eyed Pea Salsa

Ingredients

  • 3 cans black-eyed peas, drained (use seasoned if you can find it)
  • 1 cup chopped green bell pepper
  • 3/4 cup chopped onion
  • 1 cup jalapeno pepper (I used canned)
  • 1 cup Wishbone Italian Robusto salad dressing 1 small jar pimentos, drained
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon black pepper
  • 1 can diced tomatoes
  • 1 can drained corn
  • Salt and pepper to taste

Preparation

Step 1

Mix and refrigerate overnight. Serve with chips (I think Fritos tase best with this). Will keep for about 7 days in the frig.
