Preparation

Step 1

Heat oven to 400°F.

Spray cookie sheet with cooking spray.

In large bowl, mix all ingredients, except pasta sauce.

Shape mixture into 1-inch balls; place on cookie sheet.

Bake 10 to 15 minutes or until golden brown.

Immediately remove from pan. Serve with pasta sauce.

***The spinach balls can be made, and frozen uncooked, for later use. I love having them available for when unexpected guests arrive.

Make spinach balls, and place on cookie sheet lined with wax paper, without balls touching.

Make up to three layers of the spinach balls per cookie sheet, lining between each layer with wax paper to prevent them from sticking together.

Place cookie sheets with balls into freezer for at least 24 hours.

Remove balls from freezer, discard wax papter and store balls in freezer container or freezer bags. Can be stored in freezer between 3-4 months.

***Cook frozen spinach balls on 400F until golden brown and done, usually 15-20 minutes, depending on oven.
