Ingredients
- ½ cup quick cook rolled oats
- ¼ cup white flour
- ¼ cup whole wheat flour
- ⅛ cup Splenda brown sugar
- 1 t baking powder
- ½ t cinnamon
- ⅜ cup low fat sour cream
- ⅜ cup low fat or skim milk
- ¼ cup egg substitute or 1 large egg, beaten
- ½ t vanilla
- ¼ cup raisins
- ⅛ cup chopped walnuts
- 1 T butter, melted
Preparation
Step 1
In a large bowl, combine the dry ingredients. Blend in the sour cream, milk, egg, butter, and vanilla. Stir in the raisins and walnuts. Using a ¼ cup, drop on a pre-heated griddle (325°F).
Variations: add a mashed banana, or substitute blueberries or raspberries for the raisins, or substitute pecans for the walnuts.
