Ingredients
- 1 cup oil
- 1 cup tarragon vinegar
- 1 tsp. tarragon
- ½ tsp. salt
- ⅛ tsp. pepper
- 3 tsp. sugar
- ½ tsp. Dijon mustard
- Spinach and butter lettuce
- 1 can drained mandarin oranges
- 4 or five scallions finely sliced
- 1 small pkg. of slivered almonds toasted
Preparation
Step 1
Mix all ingredients except vinegar and oil with wisk until well blended. Mix in vinegar blending well. Pour oil in slowly while blending. Chill for 30 minutes. Serve on top of fresh spinach, butter lettuce and mandarin oranges and sprinkle with thinly sliced scallions and toasted slivered almonds.
