Green Chili Pork

Ingredients
- 2 lbs of pork (loin, chops or roast)
- Salt and pepper
- 2 T. green chili powder
- 1 T. ground cumin
- 3 cloves of garlic, minced
- 2 T. fresh cilantro, chopped (or 1 T. dried)
- Juice and zest of one lime
- 6 roasted, peeled, and chopped green chilis (or one small can)
- ½ red onion sliced

Preparation
Step 1
Place pork in roasting pan, season it and add other ingredients. Cook until internal temperature is ~150-160ºF. I like to cook it slow at 275ºF for 2 hours or more. You can also do it more quickly at 375ºF for about 30 minutes.
