Ingredients

  • LEMON BUTTER:

  • 1

    pound margarine

  • 2

    pound butter

  • 1/4

    cup lemon juice

  • 1/2

    cup white wine

  • 2

    teaspoon chopped garlic

  • CHICKEN SCALLOPINI:

  • 1

    ounce melted butter

  • 2

    precooked chicken breast

  • 1/4

    cup roma tomatoes

  • 1/2

    cup sliced mushrooms

  • 1/4

    cup chopped bacon

  • 1/2

    teaspoon salt, pepper, garlic salt

  • 5

    ounces precooked spaghetti

  • 4

    ounces heavy whipping cream

  • 1/2

    cup lemon butter

Directions

LEMON BUTTER: Combine margarin, butter, lemon juice, white wine and chipped garlic into a mixing bowl and beat at a medium speed until a smooth consistency in the batter is formed. Once combined, keep refrigerated. CHICKEN SCALLOPINI: In a warm pan, combine melted butter, chicken medallions, tomatoes, mushrooms, bacon, and spice mixture. Saute until chicken begins to brown and tomatoes begin to dissolve. Add heavy cream and allow to boil to the middle of the pan. Remove from stove, add lemon butter and fold together to make sauce. Serve over spaghetti.
