Grandmas Scott's Cranberry Pudding
- 1 egg
- 2 cups flour
- 1 cup sugar
- 2 1/2 teas. baking powder
- 3 Tbs. butter (softened)
- 2/3 cup milk
- 2 cups cranberries
Mix dry ingredients together; add butter; beat milk and egg in separate bowl; add to dry ingredients; beat for 2 minutes on medium; stir in berries with spoon.
Pour into greased 8x12 pan. (An 8x8 or 9x9 pan makes it a little bit thicker and a 9x12 makes it a little bit thinner.) Bake at 325 degrees for 35 - 40 minutes.
Add 1/2 cup butter in heavy sauce pan. Add 1 cup sugar and 3/4 cup evaporated milk. Mix well; cook on low 5 minutes, stirring occasionally. Take off of heat and add 1 teas. vanilla. (Refrigerate unused portions for later and reheat in microwave.)
