Ingredients

  • FOR SALAD:
  • 6 cups fresh spinach, washed thoroughly, drained, placed in bag in fridge to crisp
  • 1 bunch green onions, sliced
  • 6 slices bacon, fried crisp, blotted, and crumbled
  • 3 hard-boiled eggs, shredded
  • swiss cheese
  • FOR SALAD DRESSING:
  • 1/2 cup vinegar
  • 1/2 cup water
  • 3 tbsp. sugar
  • 1 tsp. salt
  • 1/8 tsp. pepper

Preparation

Step 1

1.) Place torn spinach (stems and veins removed) into a large salad bowl. Add onions. Place in fridge until ready to toss with dressing.

2.) Add vinegar, water, sugar, salt, and pepper together in small saucepan. Bring to a boil, remove from heat and immediately pour over spinach and onions.

3.) Toss salad together. Fill chilled salad bowls/plates and garnish with crumbled bacon, shredded egg, and swiss cheese.
