Ingredients
- ½ cup water
- 1 tsp. mesquite flavoured liquid smoke
- ½ tsp. each salt and pepper
- ½ cup barbeque sauce
- ¼ tsp. cayenne pepper
- Dash chilli pepper
- 1 boneless chicken breast
- 1/3 cup sliced red bell pepper
- 1/3 cup sliced green bell pepper
- 1/3 cup sliced onion
- 2 12-inch tortillas
- 1 1/3 cups Monterey Jack Cheese

Step 1
Prepare the marinade by combining water, liquid smoke, salt, and pepper. Add he chicken and cover, chill 1 hour. Preheat the grill. Combine the bbq sauce and the peppers. Grill the chicken and chop into bite-sized pieces. Saute the peppers, and onions until brown. Put 1 tortilla on the skillet, sprinkle 1/3 cup cheese, ½ the chicken, some bbq sauce, and then add another 1/3 cup cheese. Top with another tortilla, flip and heat until cheese melts.
