Let them eat… Alfredo Sauce

Ingredients

  • 2/3 c skim milk
  • 2/3 c fat free half and half
  • ½ c low fat cottage cheese
  • ½ c low fat parmesan cheese
  • ½ t salt
  • 1/8 t white pepper
  • 2 T cornstarch
  • 1 clove garlic, finely minced

Preparation

Step 1

Put the cottage cheese, parmesan cheese, and cornstarch in your mini-processor and whirl until smooth. Stir together the milk, half and half, cheese mixture, garlic, salt, and pepper in a small sauce pan. Heat until the sauce just comes to a boil. Stir frequently as the sauce simmers and thickens.
