Breads: Peanut Butter Protein Pancakes

Ingredients

  • 12 organic eggs
  • 12 tablespoons organic coconut flour
  • 12 tablespoons coconut milk
  • 2 tablespoons cinnamon
  • 6 tablespoons 100% raw organic peanut butter
  • 100 % organic coconut oil (for cooking)

Mix the eggs, coconut milk, and peanut butter all together. Then add the cinnamon as well as the coconut flour. If you want (optional) you could add 1 tablespoon of vanilla extract. Make sure to mix very well.
Turn the stove on to medium heat. Add a little coconut oil to the pan. Using 1/4 cup, make 3 pancakes and cook for about 1 minute each side. Make sure you always put coconut oil in between batches, so that they don't burn and they cook well.
