Ingredients
- 1 lb. chicken, cut into chunks
- 1 can tomato sauce
- 1 red pepper, chopped
- 1 can enchilada sauce
- 1 green pepper, chopped
- ½ C. chopped onion
- 1 T. fresh cilantro (1 tsp. dried)
- 2 C. refried beans
- sour cream
- shredded cheddar
- flour tortillas

Preparation
Step 1
Heat oven to 350. Spray bottom of a 9x12” pan. Stir fry chicken 2 min. Add peppers, onions, cilantro. Stir fry for 3-4 min. Remove from heat. Stir in beans. Combine enchilada sauce and tomato sauce. Spoon 2 T. onto bottom of dish. Fill tortillas and roll. Pour sauce over the top. Cover and bake 350 for 30-40 min. Cheese and sour cream on top.
