Ingredients
- 1 # baking potatoes, peeled and coarsely grated
- 1 yellow onion, grated
- 2 eggs, slightly beaten
- 2 Tbsp flour
- 1 1/2 tsp salt
- dash fresh ground pepper
- chopped parsley
- caraway seed, if desired
- sour cream
Preparation
Step 1
Combine all ingredients (except sour cream) and drop by tablespoonfuls into hot vegetable oil, being careful not to crowd the pancakes. Drain on absorbent paper and keep warm until all are cooked. Serve with dollops of sour cream.
