Ingredients

  • 15 lb country ham
  • Dijon mustard
  • Whole cloves
  • 1 c bourbon
  • 1 c brown sugar

Preparation

Step 1

Soak ham covered in water in covered pot for two days. Change water twice.
Drain, scrub to remove any mold.
Place ham in roaster pan and fill pan halfway with water.
Add 1 c bourbon and 1 c brown sugar. Bake 300 deg about 25 mins or to internal temp of 170 deg.
Remove and let rest 30 mins. Remove skin and score into diamonds. Insert cloves.
Rub ham with Dijon mustard. Make a paste of the bourbon, brown sugar water and pack on the ham.
Return to oven and bake at 400 deg for 45 minutes.
Let stand 20 minutes before carving. Serve in paper thin slices.
This ham is best served at room temp or even chilled, not usually served hot.
