Dark Chocolate Banana Bread Muffins

A delicious and decadent / mostly healthy muffin. Great by itself or with Easy Peanut Butter frosting.

Ingredients
- 3 bananas
- 2 eggs
- 1/2 cup greek yogurt
- 1/2 cup milk, we used almond milk
- 1/2 cup maple syrup
- 1 teaspoon vanilla
- 1 cup whole wheat flour
- 1/2 cup dark cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup dark chocolate chips
- Easy Peanut Butter Frosting
- 5 TBS butter or margarine, softened
- 1 cup creamy peanut butter
- 1-1/2 cups powdered sugar
- 1/3 - 1/2 cup milk
- 3/4 teaspoon vanilla
Preparation
Step 1
Preheat oven to 350˚F (180˚C).
Mash bananas in a large bowl. Add eggs and combine thoroughly. Then mix together remaining wet ingredients: Greek yogurt, milk, maple syrup, and vanilla.
Next, add in dry ingredients and mix until fully incorporated. Fold chocolate chips into the mixture.
Pour mixture into a greased muffin tin, filling each up about ⅔ full.
Bake for 30 - 35 minutes or until a toothpick comes out clean from center of muffin. Allow to cool for 30 minutes before frosting (optional).
Frosting
1. Beat butter, peanut butter, powdered sugar and vanilla in medium bowl on medium speed until smooth and creamy.
2. Gradually add 1/3 cup of milk and beat on medium, then high until light and smooth. Add additional milk 1 TBS at a time if needed to get to desired consistency.
