Sweet Potato Casserole

  • 4 tins canned sweet potatoes
  • 3/4 c brown sugar
  • 1/2 c butter
  • 2 eggs,beaten
  • 3-4 Tbsp dark rum
  • 2 tsp cinnamon



Step 1

Preheat oven to 350 F
Mash drained sweet potatoes in a large bowl
Add remaining ingredients
Blend well
Pour into 1 large or 2 smaller casserole dishes (This can be made ahead of time and refrigerated or frozen at this time)
Bake at 350 F for 3/4 hr
Serves 10-12 people
