Makes
Add an Italian twist to hamburger casserole. Tomatoes, fettuccine noodles and lots of cheese create a one-dish dinner complete with veggies.
Heat oven to 350°F. In 10-inch skillet, cook beef and onion over medium heat, stirring occasionally, until beef is brown; drain. Stir in tomatoes, tomato sauce and Italian seasoning. Heat to boiling, stirring occasionally. Reduce heat. Cover; simmer 10 minutes, stirring occasionally.
In medium bowl, beat one of the eggs and the butter. Stir in fettuccine and mozzarella cheese. In ungreased 9-inch quiche dish or pie plate, spoon and press mixture evenly in bottom and up side of dish.
In small bowl, mix cottage cheese and remaining egg; spread over fettuccine mixture in dish. Sprinkle with broccoli. Spoon beef mixture evenly over top. Sprinkle with Parmesan cheese.
An easy way to form the pasta shell is to spoon the fettuccine mixture into the pie plate and then press firmly with another pie plate.
Wrap unbaked pie tightly and label. Freeze no longer than 1 month. About 2 hours 15 minutes before serving, heat oven to 400°F. Unwrap pie and re-cover with foil. Bake about 2 hours or until hot in center. Let stand 10 minutes before cutting.
I make this recipe without any changes and my husband and I just loved it. Definitely a keeper!!!
This was good, I wouldn't call it unique, but it fits perfect into our busy lifestyle. Will make again.
This is a great recipe! Of course, I add seasoning to my ground beef while I cook (ie; Johnings Seasoning and pepper)as I think it would probably be a bit bland w/out. I also add Italian stewed tomatoes. I make it with spinach rather than broccoli so it's rather versatile. It's a great recipe for home, potluck or delivering a meal for someone as it's all in one dish so easy to transfer and yet delicious! Thanks so much..
Everytime I make it, it's a success. Little do they know how easy it is.
this was awesome. i did add some garlic powder and onion powder to the meat when i cooked it and i also added oregano and green pepper to the sauce. my family really liked it and it really dont take much time to make. i increased everything so there was enough to feed my family.
