Japanese Carrot-Ginger Dressing

Ingredients

  • 4 carrots, peeled and cut into 1/2" slices
  • 1 piece ginger root, about 2 inches, peeled and cut into 1/2" pieces
  • 1 shallot, peeled and cut into 4 pieces
  • 1 clove garlic, peeled
  • 1 tsp. dry mustard
  • 1/2 cup apple juice
  • 1/3 cup rice vinegar
  • 1/4 cup water
  • 2 Tbsp. mirin
  • 1 Tbsp. soy sauce
  • 1 Tbsp. Asian toasted sesame oil

Preparation

Step 1

Place all ingredients in a blender jar in order listed. Blend on high for 30 to 40 seconds. Serve with crisp, chopped lettuce and tomato. Store unused dressing in a tightly sealed jar in the refrigerator for up to 1 week.
