Phil's Mom's Peanut Brittle

Ingredients

  • 3 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 3 cups raw peanuts
  • 1 tbsp butter
  • 2 tsp baking soda
  • 1 tsp salt

Preparation

Step 1

1. Combine sugar, corn syrup and water in a Dutch oven; cook over low heat until mixture spins a thread (230F-234F).

2. Add peanuts; cook to soft crack stage (about 290F), stirring constantly. Remove from heat.

3. Add butter, soda and salt. Mix well.

4. Spread mixture quickly onto 2 warm buttered 15x10x1" jellyroll pans. Cool and bread into pieces.
