Black Bean Salad w/ Mango

Ingredients

  • 2 ears raw sweet corn, about 1 cup kernels
  • 1 red or orange bell pepper, small diced
  • 1/2 red onion, minced
  • 1 jalapeno, seeds removed and pepper minced
  • 1 15-oz can black beans, drained and rinsed
  • 1 large mango, ripe but firm, small diced
  • juice of 1 large lime
  • 1 tbsp olive oil
  • 1/2 tsp cumin

Preparation

Step 1

Using a knife, cut the corn kernels off the cob carefully. Place kernels in a large mixing bowl. Add the diced bell pepper, red onion, jalapeno, mango and black beans. Toss to combine.

Add lime juice, olive oil and cumin. Toss well. Serve immediately or place in the fridge for up to two days before serving.

Once I discovered raw sweet corn straight off the cob I could never go back either. SO crunchy! One of my favorite salads is just spinach, raw sweet corn, and avocado – yum. Although, this salad could easily encroach its position – love this combination.

Fruity salsas are my fave on hot days too! Love the flavor combo here. Can’t believe you have an extreme heat advisory already (especially when there are wonky snowstorms in Colorado)!

Gahhh I love everything about this salad!! Big mixes of fresh fruits, veggies and protein are totally what I crave during the warm months too. I couldn’t agree more with you on the raw sweet corn thing – I think it was one of the recipes that you posted last summer that called for it, and I don’t think I’ve cooked my corn since!

AVOCADO TOAST IS AMAZING!! Recently I have been doing a twist on plain avocado toast and chopping a boiled egg, stirring it into some mashed avocado (about 1/4 of a whole med. avocado), and spreading all of that on top of whole wheat toast. OMG. TRY IT!!

I have never been a huge mango fan, but I think this recipe could change that. I love pretty much anything with black beans.

I’ve never tried raw sweet corn but I want to now. I love everything about this salad and it is perfect for this hot weather! It’s been in the 90′s here in the East Bay, I feel like I’m back in Texas!

I’m not a big fan of this California heat wave either! Our temperatures are close to 100°, and the house never cools off, even with all of the windows open in both the mornings and evenings. But mango and fresh corn might distract me from the heat for a little bit… Looks delicious!

It was extremely hot here in la (for spring anyway) and this would have been perfect. When it gets hot, I lose my appetite. Something like this would have picked it right back up…cold, hearty, full of wonderful flavors that go so well with one another!

I have a recipe very similar to this, the only thing different is I add a package of dry italian dressing seasoning, so good!
