Ingredients
- Juice of 1 large lemon
- 1½ lbs Large raw shrimp
- ¼ cup of olive oil
- bunch of scallions sliced
- ½ cup of minced celery
- ½ cup of minced parsley
- 2 garlic cloves crushed
- 14.5 oz can of whole peeled tomatoes
- ½ cup chicken broth
- ½ cup of white wine
- salt, pepper, oregano
- 1 cup of crumbled Feta Cheese

Preparation
Step 1
Clean shrimp, and place in bowl with lemon and salt - place aside.
Heat olive oil in skillet. Saute scallions, celery, parsley and garlic till tender. Add tomatoes and bring to boil. Simmer for 20 min. Add broth and wine, and simmer for 5 min more.
Spoon ½ sauce into shallow casserole dish, add shrimp, sprinkle with oregano, and spoon remaining sauce over. Sprinkle Feta on top, and bake at 400 for 15-20 min.
