Broccoli Salad with Oranges

Ingredients

  • Salad Dressing:
  • Whole stalk broccoli
  • 1/2 red onion, diced
  • 1 small can mandarin oranges, drained
  • 1 tbsp Splenda or fructose
  • 1/3 cup safflower or canola oil
  • 1 1/2 tsp finely grated orange peel
  • Juice of 1 orange
  • 1 tbsp white wine vinegar

Preparation

Step 1

Remove florets from the head of the broccoli; wash and drain. Cut into small, bite-sized florets. Place in large bowl.

Clean and peel stems of broccoli as needed. Cut into 1-inch chunks. Place in processor and chop until evenly chopped and about pea-sized. Add to bowl. Add diced onion.

In small bowl, combine dressing ingredients and whisk until blended. Pour over broccoli mixture and toss together. Refrigerate.
