Ingredients
- 1 pkg corn tortillas
- 2 cans enchilada sauce
- 1 small onion, chopped
- 1/2 # grated cheese
- 1/2 head lettuce, shredded
- tomatoes, drained and chopped
- 1/2" oil in frying pan
Preparation
Step 1
Heat oil enough to soften tortillas. Heat enchilada sauce in small frying pan. Dip tortillas in hot oil and then in hot sauce.
Place in pie pan and put grated cheese in the middle of tortilla and sprinkle with onion. Roll and place in pan, seam side down. Repeat using all tortillas.
Pour remaining sauce over enchiladas and sprinkle with grated cheese. Put in hot oven until cheese melts. Top with lettuce and tomatoes before serving.
