Mashed Butternut (Winter) Squash

Ingredients

  • For each cup sqush:
  • Squash
  • 1 Tbsp butter
  • 1 tsp brown sugar
  • 1/4 tsp salt
  • 1/8 tsp ginger
  • warm cream or orange juice
  • raisins or nutmeats
  • 1/4 cup crushed pineapple

Preparation

Step 1

Cut squash into cubes, cover with water, and boil for 10-15 minutes. Drain and mash. To squash, add butter, sugar, salt, and ginger. Beat the mixture well adding enough cream or orange juice to make it a good consistency. Place in serving dish and sprinkle with raisins and crushed pineapple.
