Butter Steamed New Potatoes

Creamy soft and delicious, can cook almost done and let sit with cover off and 5-10 minutes before serving turn up heat to brown. Stir often.

Ingredients
- 1/3 cup butter
- 1 1/2 lb. new potatoes
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons snipped dill or parsley, also delicious with out herbs

Preparation
Step 1
Heat butter in Dutch oven or 12" skillet until melted. Add potatoes, that are 1"or less in diameter. If larger, cut into 1" chunks. Add potatoes; stir to coat with butter. Sprinkle with salt and pepper. Cover and cook over low heat, shaking pan occasionally, until tender, about 30 minutes. If not brown enough turn up heat to brown. Taste and add more salt and pepper to taste. Place in serving dish, pour any remaining butter ofer potatoes; sprinkle with dill or parsley, if desired.
I normally have to add a little more salt and pepper.
