Creamed Spinach

Ingredients

  • 1 pint half-n-half
  • 1/2 cup chopped shallots
  • 1/2 stick butter, unsalted
  • 1/3 cup grated Parmesan cheese
  • 1 1/2 tsp. creole mustard
  • 1/2 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 4 lbs. fresh spinach, tough stem removed

Preparation

Step 1

In large saucepan, combine half-n-half and chopped shallots. Over med. high heat, bring to a boil. Adjust heat to maintain a steady boil; boil for 15 to 18 minutes or until half-n-half mixture is reduce to about 1 cup.

Reduce heat to med. Stir butter into mix until melted. Stir in Parmesan cheese, mustard, salt and cayenne. Stir in chopped spinach; cook stirring frequently for 8 minutes to cook spinach. (Can be made a day ahead).
