Mediterranean Lentil Salad

Ingredients

  • 1 C. lentils
  • 4 C. water
  • 2 C. plum tomato, coarsely chopped
  • 1/2 C. sliced green onions
  • 6 T. fat-free Italian dressing
  • 1/2 t. pepper
  • 1 (4 oz) crumbled feta cheese with basil and tomato

Preparation

Step 1

Combine lentils and water in large saucepan; bring to a boil. Partially cover, reduce heat, and simmer 20 minutes or until lentils are crisp tender. Drain

Combine lentils, tomato, green onions, dressing and pepper in medium bowl; toss gently. Cover and chill at least 1 hour. Spoon salad in lettuce lined bowl if desired. Sprinkle feta cheese evenly over each serving.
