Ingredients
- 1 1/2 pounds apples
- 1 quart water
- 1 teaspoon cornstarch
- 1 tablespoon cinnamon
- 1/3 cup sugar
- 3/4 cup sour cream
- Croutons (optional)

Preparation
Step 1
Quarter and seed 1 pound of the apples. Simmer in the water for 15 minutes. Rub through a sieve. Mix the cornstarch with a little water and stir in. Bring to a boil. Peel and slice the remaining apples. Add to the soup with cinnamon, sugar, and sour cream. Serve warm or cold. Garnish with croutons.
