Scrambled eggs with chives

Awesome scrambled eggs that more show the consistency of a spread for toast.

Ingredients
- 2 tbsp butter
- 12 large eggs, lightly beaten
- handful of chives, minced
- salt and pepper
- 2 tbsp creme fraiche
- 4 thick slices of country bread, toasted
Preparation
Step 1
Melt butter in a nonstick pan or pot. Add the beaten eggs. Stir with a wooden spoon over low heat for a few minutes until eggs are half set but still quite runny. **Remove for heat and continue stirring if you think the pan is getting too hot. After a minute return to heat.***
Stir in chives and seasoning. Keep stirring until eggs are almost set, then quickly incorporate creme fraiche and remove from the heat.
Place a slice of toast on each warm plate and spoon eggs on top. Serve immediately.
