“Rotkraut” German-Style Braised Red Cabbage with Apples & Red Wine {vegan, grain free, GF}

Ingredients

  • 1 medium head red cabbage
  • 3 tablespoon heat stable oil
  • 1 large onion, diced
  • 2 apples, cored and thinly sliced
  • 4 tablespoon red wine vinegar
  • 8 oz vegetable broth
  • 1 cup dry red wine
  • 1 teaspoon maple syrup
  • 3 cloves
  • 2 bay leaves
  • Salt and pepper, to taste

Cut cabbage into quarters and remove the stem. Shred cabbage with a knife or with a mandolin slicer.
In a large pot, heat oil over medium heat. Glaze onions, then add apples and sauté for about 5 minutes. Add shredded cabbage together with red wine vinegar and sauté for an additional 5 minutes before adding all remaining ingredients. Cover with lid askew and cook over medium heat for about 35-45 minutes or until cabbage is tender. Stir occasionally.
Taste for salt - you may need a considerable amount depending on your preference. Store in the refirgerator for 3-5 days.
