Ingredients

  • 2 lbs shrimp, thawed
  • 2/3 cups fresh bread crumbs
  • 2 cloves garlic, crushed & chopped
  • 1/8 tsp each: tarragon, nutmeg, white pepper
  • 1/4 tsp each: onion, garlic, paprika
  • 1/2 tsp thyme
  • 2 tbs chopped parsley
  • 1 stick butter, melted
  • 4 shallots or 1/2 onion, finely chopped
  • 1/3 cups sherry

Preparation

Step 1

Place shrimp in simmering water to which 2tbs salt has been added. Simmer, not boil, 1 1/2 minutes, until partially cooked. Drain & run under cold water. Mix all other ingredients together. Toss shrimp with 2/3 of the bread crumb mixture. Place in buttered casseroleor individual ramekins of shells. Sprinke remaining bread crumbs on top. Sprinkle with Parmasan cheese. Bake at 400 for 15 minutes for casserole or 10-15 minutes for individual shells.
