Seafood Chowder

This is absolutely the best chowder recipe I have found. It is great for those cold winter days and watching football on TV

Ingredients

  • ¾ cup chopped onions

  • ¾ cup chopped celery

  • 1 stick butter

  • 1 7¾ can oz crab meat

  • 1 7¾ oz can minced clams

  • 1 7¾ oz can oysters with liquid

  • 1 7¾ oz can shrimp

  • 2 12 oz cans potato soup

  • 2 12 oz cans cream style corn

  • 1 6 oz jar pimentos

  • 2 quarts milk

  • 1 teaspoon salt

  • ¼ teaspoon red pepper

  • ½ teaspoon black pepper

  • 1 teaspoon thyme

  • 1 teaspoon dill weed

  • 1 cup wine (sherry or dry red) - optional

Directions

In large sauce pan, saute onion and celery in one stick of butter until soft. Add remaining ingredients (except wine) and simmer at least 15 minutes, stirring frequently. Do not allow milk to boil. Before serving, add one cup of wine, if desired. I find that that the flavor of this chowder improves after it has cooled and then reheated. It makes quite a lot and I generally add more milk for subsequent meals so that it doesn't get too thick!
