Pumpkin Seeds-Sugar and Spice

Ingredients

  • ● 2 cups unsalted shelled pepitas, also known as pumpkin seeds
  • ● 1/4 cup packed light brown sugar
  • ● 1 Tbsp. chili powder
  • ● 1 tsp. cumin
  • ● 1 tsp. salt
  • ● 1 large egg white, lightly beaten

Preparation

Step 1

1. Preheat oven to 350°F. Mist a baking sheet with cooking spray.
2. In a small bowl, mix brown sugar, chili powder, cumin and salt.
3. In a large bowl, combine pepitas (pumpkin seeds) and egg white; stir to coat.
4. Add sugar and spice mixture and mix well. Spread pepitas in a single layer on baking sheet and bake until dry and toasted, about 12 minutes.
5.Remove from oven, stir to break up while still warm, and let cool completely on baking sheet on wire rack.
