Ingredients

  • 2 tsp. olive oil
  • 1 Cup chopped celery
  • 1 medium onion, chopped
  • 1 small red pepper, chopped
  • 2 jalapeno chili peppers, seeded and finely chopped
  • 2 (8-oz.) cans tomato sauce
  • 1 (15-oz.) can red beans, drained and rinsed
  • 1 (15-oz.) can black beans, drained and rinsed
  • 1 (14 ½ oz.) can ready to serve vegetable broth
  • ½ C. uncooked long grain white rice
  • ½ tsp. hot pepper sauce (more if you like)

Step 1


Heat oil in Dutch oven over medium heat until hot. Add celery, onion, pepper, chili peppers and cook and stir 6-8 minutes. Add remaining ingredients and mix well. Bring to a boil. Reduce heat and cover and simmer for 20 min.
