Ingredients
- 2 ears corn
- 1 english cucumber
- 1/2 diced red bell pepper
- minced jalapeno, to taste
- fresh cilantro
- 1 lime
- 2 tbsp olive oil
- salt & pepper
Preparation
Step 1
Basic Grilled Corn:
Preheat grill to medium-high heat. Spray shucked ears of corn with olive oil cooking spray (or brush lightly with olive oil), season with salt and pepper. Pleace corn directly on grill and cook, turning regularly, until lightly charred and cooked through, 10-15 minutes. Let cool and slice kernels off cobs into a bowl.
Corn Relish:
In a bowl, combine kernels from 2 ears grilled corn, english cucumber, diced red bell pepper, minced jalapeno, fresh cilantro, lime juice, olive oil. Season to taste with salt and pepper.
Serve as a topping for grilled fish or chicken.
