  • Chicken or beef stock (beef consume works best)
  • peeled large raw beet
  • consume
  • cut up leaves and stems from beet
  • cornstarch
  • cream
  • lemon juice
  • sugar
  • sour cream
  • parsley
  • dill

Preparation

Step 1

Run large beet through blender with some of the consume. Add stems and leaves to the stock and cook until soft. Add consume and mix. Add cornstarch and cream and cook until thickened. Adjust flavor with lemon juice or sugar. Serve with sour cream, parsley, potatoes, dill. (Don't boil if it has the sour cream in it.)
