Mixed Greens with Bacon, Glazed Pecans and Goat Cheese Dressing
Ingredients
- 4 oz. crumbled mild soft goat cheese, divided
- 2 tablespoons olive oil
- 1 tablespoon sherry vinegar or white wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- 1/4 teaspoon coarse salt
- 1/4 teaspoon pepper
- 5 slices thick-cut bacon, halved crosswise
- 8 cups loosely packed mixed salad greens
- 1/2 cup Glazed Pecans, coarsely chopped

Step 1
1. Whisk 1 tablespoon of the cheese, oil, vinegar, mustard, honey, salt and pepper in small bowl.
2. Cook bacon in large skillet over medium heat until lightly crisp, turning as needed. Drain on paper towels; coarsely chop.
3. Toss greens and remaining cheese in large bowl with enough dressing to lightly coat. Top with bacon and Glazed Pecans.
4 (2 1/2-cup) servings

Glazed Pecans
1 cup pecans
2 tablespoons packed dark brown sugar
2 teaspoons soy sauce
1 teaspoon chili powder
Heat oven to 375°F. Combine all ingredients in small bowl until pecans are well-coated. Spread on rimmed baking sheet; bake 7 to 8 minutes or until glazed and toasted, stirring once. Remove from oven; toss to coat. Cool completely. Separate clumps; store in an airtight container.
