PANCAKES*****Creamy Corn Cakes

Ingredients

  • 3 servings
  • 1/2 cup flour
  • 1/3 cup cornmeal
  • 1 tbsp. sugar or maple sugar
  • 1 pinch salt
  • 1 tsp. baking powder
  • 2 egg whites or equivalent
  • 1/3 cup skim milk or buttermilk
  • 1/2 cup creamed corn
  • 1 tbsp. canola oil or hazlenut or walnut or almond oil

Preparation

Step 1

* *Combine* dry ingredients.

* *Mix* together egg whites, milk, corn and oil in a small bowl with a whisk. *Pour* over dry ingredients and *stir* just until blended.

* *Spray* a non-stick skillet or griddle with cooking spray or *brush* lightly with oil or clarified butter and *heat* over medium-high heat until hot.

* *Spoon* batter by 1/4 cup onto hot skillet and *cook* until evenly covered with bubbles, about 2 minutes. *Turn* and cook for 1 to 2 minutes more on second side, until lightly browned.

* *Repeat* with remaining batter.

* *Serve* with butter and maple syrup.
