Modern Biscotti

Ingredients

  • 2 1/2 c whole nuts
  • 1 c sugar
  • 8 tbsp ( 1stick butter softened at room temp)
  • 6 eggs
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla
  • 4 c flour
  • 1 3/4c nut flour
  • 1 c semi sweet chocolate chips

Preparation

Step 1

Preheat oven to 350F
Put nuts on baking sheet in single layer and toast in oven, 15 minutes. Remove from oven and let cool
Raise oven temp to 375F
Put sugar, butter, 5 eggs, baking powder and vanilla in bowl and beat at medium speed until mixed, 2 minutes
Add flour and nut flour and beat at medium speed for 1 min. Lower speed to low and add almonds and chocolate chips until mixture comes together in a ball, 1minute
Separate dough into 3 pieces
Lightly flour surface and roll out logs. Transfer to baking tray
Beat remaining egg and brush bars
Bake until solid and slightly rubbery 25-30min. Remove tray from oven and let cool on tray for 20-30min. Lower oven temp to 325F
Cut bars into 12 pieces
Return pieces to baking tray, open sides up and bake until hardened, 20 min
Remove from oven and let biscotti cool 20-30min
