Ingredients

  • 1 tbsp unsalted butter, melted
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tbsp sugar
  • 3 tbsp vegetable shortening
  • 3/4 cups buttermilk
  • 1/2 cup heavy cream
  • 1/2 cup flour for shaping
  • 2 tbsp unsalted butter, melted

Preparation

Step 1

Preheat oven to 475°

Brush 8-inch cake pan with 1 tbsp. melted butter.

Combine 1 1/2 cups flour, baking powder, salt and sugar in mixing bowl. Using pastry cutter or 2 forks, cut shortening into flour mixture. Resulting lumps should be larger than a pea.

Stir in buttermilk and cream, then allow mixture to sit 3 minutes. Distribute 1/2 cup flour onto work surface. Flour hands, then sprinkle flour over wet dough and pat into a round. Using 2-inch cutter, cut biscuits into about 8 rounds. Place biscuits tightly into cake pan and allow to rise up but not spread out.

Brush each biscuit with some of the 2 tbsp. melted butter. Bake in center of oven until lightly browned, 15-20 mintues.

Cook on wire rack for 3 minutes, then turn out and serve.
