Ingredients
- 3/4 cups sugar
- 3 T. quick cooking tapioca
- 1 tsp. grated lemon rind
- 1/2 tsp. ground cinnamon
- 2.5 pounds peaches
- 1 tsp. lemon juice
- 1 prepared pie crusts
- TOPPING
- 2/3cups quick cooking oatmeal
- 1/3 cup firmly packed brown sugar
- 1/4 cup sifted all-purpose flour
- 1/4 cup chopped walnuts or pecans
- 3/4 stick butter

Preparation
Step 1
Mix sugar, tapioca,lemon rind and cinnamon in small bowl. Peel peaches and slice evenly into bowl. Sprinkle with lemon juice and sugar mixture. Toss gently to mix.
Fill pie shell with filling. Combine oatmeal, brown sugar, flour and nuts in small bowl. Work in butter with fingertips until mixture is crumbly and thoroughly mixed. Sprinkle over fruit, making sure fruit is covered. Place a piece of aluminum foil on pie. Bake in 425 degree oven for 30 minutes. Remove foil and continue baking 15 minutes or until topping is set and juices bubble up. Cool at least one hour on wire rack.
