Fancy Baked Potatoes

  • potatoes 4 larges baking
  • canola oil
  • butter 2 tablespoons
  • milk 1/4 cup
  • sour cream 1/2 cup
  • salt 1/2 teaspoon
  • pepper 1/4 teaspoon
  • pimiento 1 (2-ounce) jar diced , drained, divided
  • chives 2 tablespoons minced , divided


Servings 8


Step 1

Scrub and pierce potatoes.
Bake at 375° for 1 hour or until tender.
Cut each potato in half lengthwise.
Scoop out the pulp, leaving thin shells.
In a large bowl, mash the pulp with butter.
Stir in the milk, sour cream, salt, pepper and half of the pimientos and chives.
Spoon into potato shells.
Place on a baking sheet.
Bake, uncovered, at 375° for 20-30 minutes or until heated through.
Sprinkle with remaining pimientos and chives.
