Ingredients
- 1 1/4 cups high lysine cornmeal
- 3/4 cup whole wheat or unbleached white flour
- 2 1/2 tsp baking powder
- 3/4 tsp salt, optional
- 1 egg
- 3 tbsp melted butter or vegetable oil
- 1 tbsp honey
- 1 cup milk
Preparation
Step 1
Preheat oven to 425 F. Place buttered pan in oven until hot. Mix all dry ingredients together with a whisk. Beat liquids together. Stir dry mixture into liquids with a few rapid strokes. Place batter in hot 9-by-9-inch pan, 12 cup muffin pan or stick pan. Bake sticks about 15 minutes; bread or muffins 20 to 25 minutes. Serve hot.
