Ingredients

  • bacon 4 slices
  • onion 1 cup chopped
  • garlic 4 cloves minced
  • ground beef 1/3 pound
  • celery 1 cup chopped
  • carrot 1 cup cubed
  • tomato purée 2 cups
  • stewed tomatoes 2 (14 1/2-ounce) cans
  • beef broth 1 (14.5-ounce) can
  • french onion soup 1 (10 1/2-ounce) can
  • water 5 cups
  • red wine 1/4 cup
  • basil 1 teaspoon dried and crushed
  • zucchini 1 cup chopped
  • spinach 2 cups fresh rinsed and chopped
  • garbanzo beans 1 (15-ounce) can drained
  • parsley 1/4 cup fresh chopped
  • pasta 1 cups uncooked
  • salt and pepper to taste
  • parmesan cheese fresh

Preparation

Step 1

In a large stock pot cook bacon
Drain off fat
Add onion, garlic and beef
Cook until onions are translucent
Add celery, carrot, tomato puree, stewed tomatoes, broth, onion soup water, wine, oregano, basil, salt and pepper
Cook for 15 minutes over medium high heat

Stir in zucchini, spinach, pasta, garbanzo beans, and parsley
Cook for 15 minutes
Serve with parmesan cheese (optional)
