Tropical Rice

The sweetness of coconut and mango make a nice foil for chicken, fish and meat dishes.

Ingredients
- 2 Tbsp olive oil
- ½ cup unsweetened shredded coconut
- ½ cup chopped onion
- 2 cups rice
- 4 cups chicken broth
- 1 cup fresh cubed mango
- 1 tsp fresh minced ginger
- ½ cup freshly chopped cilantro
Preparation
Step 1
Heat 1 Tbsp of the oil in saucepan; add coconut and toast until golden. Remove coconut from pan and set aside. Heat remaining olive oil and add onion, cooking 2 minutes, stirring constantly. Add rice and stir. Add broth, cover, and bring to boil, then reduce heat and simmer until rice is tender, about 25 minutes. Remove from heat; fold in mango, ginger and cilantro.
