Ingredients

  • 1 1/2 # fresh rhubarb (5 c)
  • 8 slices slightly dry firm-textured white bread (4 c)
  • 1 1/4 c sugar
  • 1/4 c butter, melted
  • 3/4 t finely shredded orange peel
  • 1 med orange, peeled, sectioned & cut up
  • 1/4 t salt>combine, turn into greased 9x9" baking pan
  • 1/2 c coconut
  • 3/4 t finely shredded orange peel>>combine
  • Sprinkle over.
