Ingredients
- 2 Tbsp unsalted butter
- 2lbs. Spanish onions, thinly sliced (about 8 cups)
- 2 Tbsp olive oil
- 1/2 tsp fresh thyme, chopped
- 1/2 tsp salt, divided
- 1/2 pepper, divided
- 1 loaf French bread, sliced 1/4" thick, 18 pieces
- 8 oz. Brie cheese, rind removed, cut into 18 thin sluces

Preparation
Step 1
I Preheat oven to 350°F.
2 Melt butter in large pan over medium heat. Add onions and cook, stirring frequently, for 15-20 minutes until caramelized. If onions begin to stick to the pan,
add 1-2 Tb p. water during cooking. Remove from heat and stir in 1/2 t p. each salt and pepper.
3 In a small bowl, mix together olive oil, thyme, and remaining salt and pepper. Brush both sides of bread slices with oil mixture and place on sheet pan. Bake for
12 minutes, turning once halfway through baking.
4 Remove sheet pan from oven, and top each toasted bread slice with 1 Tbsp. caramelized onions and one slice of Brie.
5 Return crostini to oven for 2-3 minutes or until cheese melts slightly. Serve warm
