Russian Tea Cakes

My mom made these every year. Mike and Nick love them and as a result I bake at least 4 recipes.

I roll them 2-3 times in sugar and cover them with sugar in the tins.

Ingredients

  • 1 C. butter
  • ½ C. powdered sugar
  • 1 tsp. vanilla
  • 2 ¼ C. all-purpose flour
  • ¼ tsp. salt
  • ¾ C. -1 C. finely ground pecans

Preparation

Step 1

Preheat oven to 400. Mix butter, sugar, and vanilla thoroughly. Work in flour, salt, and nuts until dough holds together. Shape dough into 1” balls. Place on an ungreased cookie sheet. Bake 10-12 minutes or until set, but not brown. While they are still warm roll into confectioners’ sugar. Cool & roll in sugar again before serving.
