Back Bay Potatoes

Ingredients

  • 8 sm. Red Potatoes
  • 1 med. Onion, sliced
  • 5+ slices of bacon
  • Grated sharp cheddar cheese
  • Grated jack cheese
  • Salt & Pepper

Preparation

Step 1

1. Boil potatoes until just tender, slice.
2. In large skillet, fry bacon, drain.
3. In hot bacon grease, brown potato slices and onion.
4. Add bacon, crumbled, and grated cheese. Heat until cheese melts. Serve immediately.

*Potatoes must be cooked; NOT al dente
*Salt and pepper taters with step 3
*Use butter if not enough bacon grease
*Brown; stir; brown; stir; brown; stir…get lots of browning throughout whole dish
*Lid skillet once cheese is added to melt it fast without burning bottom.
