Roasted Chicken Linguine with Olive Oil

Ingredients

  • 3 tbsp extra virgin olive oil
  • 1 chicken breast, cut into small pieces
  • 1-1/2 links Italian sausage, casings removed
  • 2 servings linguine, cooked
  • 3 white button or small Portobello mushrooms, cleaned and thinly sliced
  • 2 scallions, sliced
  • 2 cloves garlic, minced
  • Salt and pepper
  • 1 tsp. Italian seasoning

Preparation

Step 1

1. In a large skillet over medium-high heat, cook chicken and sausage in hot olive oil.
2. Add mushrooms, scallions, and garlic to meat mixture and saute for 4-5 minutes.
3. Add Italian seasoning and a pinch of salt.
4. Add about 1/2 cup of water to the skillet, and add the cooked linguine. Cook until the meat is cooked through and the mushrooms are light brown.
5. Drizzle with extra virgin olive oil and serve.
